- ¾ cup Wholesome Organic Cane Sugar, Recommended
- 2 large Egg Yolks
- ½ tsp Watkins Lemon Extract, Recommended
- ¼ tsp Kosher Salt
- 2 cups Bob's Red Mill Whole Wheat Pastry Flour, Recommended
For Lemon Glaze
- 1 cup Confectioners’ Sugar
- 2 tbsp Fresh Lemon Juice
- 1 tsp Grated Lemon Zest
Instructions
For Cookies
- Preheat your oven at 350 Degree Fahrenhiet.
- In a stand mixer, beat butter and Organic sugar together until it gets light and fluffy.
- Add vanilla extract, kosher salt, and egg yolks to the mixture and beat again.
- Add the Wheat Pastry Flour gradually, beating as you go to ensure thorough mixing.
- Now wrap the dough with a plastic wrapper.
- Refrigerate the dough for 30 minutes or until the dough is formed.
- Take a tablespoon of the chilled dough, shape it into cookie.
- Take a cookie sheet and set it on a tray, then place all the cookies on it.
- It needs to be bake for at least 20 minutes more to turn a light golden color.
- When it's finished, bring it out and let them cool.
For Lemon Glaze
- To make the glaze, in a mixing bowl, whisk Confectioners’ Sugar, lemon juice and lemon zest until forms a glaze.
