I have been making this recipe about once a month since the early 70’s. it is one of my husband’s favorite quick dinners! I have been making it so long I didn’t realize that I had made changes – I cook it from start to finish on top of the stove. It’s much quicker than cooking it in the oven. I add a 28 oz can of petite diced tomatoes because I use more than 1/2 cup of uncooked rice. If I am making more rice than I need for this meal, I cook the rice separately and add some of the cooked rice to the meat and tomatoes in the pan. It’s best to stir hot rice into the hot meat & tomatoes: stir to combine and don’t cook too long before serving so the rice doesn’t become mushy or soak up all the low liquid. I also add crushed red pepper to taste and/or 1/2 of a finely chopped jalapeno.pepper to the meat mixture. I serve it with tortillas or tortilla chips, and nacho rings for those who want more heat. If there’s any leftover (usually not) it reheats well in the microwave. It’s a pretty basic recipe b but good enough to have it in my rotation for 50 yrs!
