I watch that episode and you’re supposed to add about a cup of water to it and then as it cooks down it thickens up. It was a little bit plain for me so I added half a teaspoon of basil a teaspoon of garlic powder and about 3/4 of a teaspoon of red pepper flakes and it turned out awesome.

I made this sauce, and it was exactly what I was looking for. Made it with San Marzano tomatoes chopped fresh Basil instead of parsley, only about 1/2 cup of water, 2 tsp Kosher salt, a splash more of EVOO and simmered for exactly 1 hour. For my taste, it was perfect, and it will be my “go to” sauce going forward. I loved the simplicity of the sauce. I too watched that episode of Stanley’s tour of Italy, thanks for sharing.
