Instructions
 

  • In a microwave-safe 2-quart dish, mix together corn syrup and sugar until well combined.
  • Microwave the mixture on high for 4 minutes.
  • Stir in the peanuts and salt, then return the dish to the microwave and cook for an additional 4 minutes on high.
  • Add the butter and vanilla extract to the mixture and blend well.
  • Microwave for an additional 1 and 1/2 minutes on high.
  • Remove the dish from the microwave and quickly add the baking soda, stirring until the mixture becomes light and foamy.
  • Pour the mixture onto a lightly greased cookie sheet or marble slab, spreading it as thin as possible.
  • Allow the peanut brittle to cool completely.
  • Once cooled, break the brittle into pieces.
