Heat Oil and Cook Garlic:
Cook Mushrooms:
Add 1/2 cup of sliced mushrooms to the pan.
Sprinkle in 1/2 teaspoon of chilli flakes, 1/8 teaspoon of dried oregano, and 1/8 teaspoon of salt.
Cook the mixture for a few minutes until the mushrooms are tender.
Assemble the Sandwich:
Place 1 slice of bread on a plate.
Sprinkle 3 tablespoons of mozzarella cheese on the bread.
Spoon the sautéed mushroom mixture on top of the cheese.
Add another 3 tablespoons of mozzarella cheese over the mushrooms.
Place the second slice of bread on top.
Grill the Sandwich:
Melt 2 tablespoons of unsalted butter in a pan over low heat.
Place the assembled sandwich in the pan.
Grill the sandwich until both sides are golden brown and the cheese has melted, flipping as needed.
Serve:
Remove the sandwich from the pan and let it cool slightly.
Cut it in half if desired and serve warm.
