  • Pour 1/4 cup olive oil into a pan and heat it on medium-low.
  • Add the chopped potatoes to the pan and cook for 3 minutes.
  • Mix in 1/4 cup chopped onion, 3/4 tsp salt, and 1/2 tsp black pepper. Cover the pan and let it cook for 2 minutes.
  • Stir in the chopped tomatoes and cook until they are soft.
  • Break 3 eggs over the mixture in the pan. Sprinkle a little salt and pepper on top of the eggs.
  • Place the green chillies and chopped coriander leaves on top of the eggs.
  • Cover the pan and cook for 3-4 minutes until the eggs are set.
