Pour 1/4 cup olive oil into a pan and heat it on medium-low.
Add the chopped potatoes to the pan and cook for 3 minutes.
Mix in 1/4 cup chopped onion, 3/4 tsp salt, and 1/2 tsp black pepper. Cover the pan and let it cook for 2 minutes.
Stir in the chopped tomatoes and cook until they are soft.
