Slice the cucumber and carrot using a peeler into thin strips.
In a large mixing bowl, add the grated garlic, yoghurt, salt, paprika, chopped green chilli, coriander leaves, lemon juice, and olive oil.
Stir everything together until the mixture is smooth and well combined.
Add the sliced cucumber and carrot to the bowl.
Toss everything gently until the vegetables are coated with the dressing.
