  • Preheat the oven to 375 Degrees Fahrenheit.
  • First slice the Zucchini and Yellow Squash.
  • Cut the Broccoli into small pieces and set the vegetables aside.
  • Take a pie plate and generously coat it with cooking spray.
  • Now place the egg squash evenly on the pie plate, then the zucchini, and Broccoli.
  • Now spread the Fat-Free Cheddar Cheese on the vegetables.
  • Cut two wedges of Light Laughing Cow Cheese into chunks and spread evenly them on the cheese.
  • Measure 1 cup of eggs beater in a bowl and whisk it up
  • Pour the egg squash over the top evenly.
  • Place the pie plate in the oven and bake for 35 minutes.
  • Quiche can be served warm, hot, or cold.
