  • Wash the chili peppers and habanero peppers. Chop them roughly. Peel and chop the garlic cloves.
  • Heat the pan over medium heat. Add the truffle olive oil. Sauté the chopped garlic and peppers until soft and tender. This takes about 5–7 minutes.
  • Pour in the white vinegar. Add sugar and cook on medium-low heat for 6–7 minutes. Stir occasionally to blend the flavors.
  • Remove the pan from heat and let the mixture cool slightly.
  • Transfer the mixture into a blender. Add honey and black truffle pate. Blend until smooth.
  • Pour the blended mixture through a fine mesh strainer into a bowl. This removes seeds and skins for a smooth texture.
  • In a small bowl, mix 1 teaspoon oil, 1 teaspoon vinegar, and xanthan gum until smooth. Add this mixture to the blender and blend again until fully combined.
  • Strain the sauce once more for extra smoothness. Pour into a clean glass bottle.

Notes

Wear gloves when handling habanero peppers.
Remove seeds for a milder sauce.
For extra heat, keep the seeds and membranes.
