  • In a large mixing bowl, combine the following ingredients:
  • Apple cider vinegar
  • Vegetable oil
  • Sugar
  • Celery seed
  • Onion powder
  • Salt
  • Freshly ground black pepper
  • Whisk the ingredients together until the sugar dissolves and the oil and vinegar blend well.
  • Finely slice 1 1/2 heads of green cabbage using a sharp knife or mandoline slicer.
  • Next, shred 6 large carrots using a grater or vegetable peeler.
  • Make sure the cabbage and carrots are thinly sliced so they absorb the dressing properly.
  • Add the sliced cabbage and shredded carrots to the bowl with the dressing.
  • Use two forks or salad tongs to toss everything together.
  • Mix until the vegetables are evenly coated with the dressing.
  • This coleslaw is best served immediately after mixing.
  • Serving it fresh keeps the vegetables crisp and crunchy.

Notes

Avoid using white vinegar because it has a stronger flavor.
Apple cider vinegar gives the slaw a better balance of sweetness and tanginess.
Olive oil can be used, but vegetable oil works best for this recipe.
Freshly ground black pepper improves the overall flavor.
