  • In a big bowl, mix the flour, cornmeal, sugar, baking powder, and salt. Set aside.
  • In another large bowl, whisk together eggs, melted butter, buttermilk, and water until well combined.
  • Add the wet ingredients to the dry ingredients and gently whisk until just combined.
  • Pour oil into a large frying pan, cast-iron skillet, or griddle over medium-low heat.
  • Pour in ½ to ¾ cup of batter for each cake, making sure they don't touch.
  • Cook for 3-4 minutes on each side or until the cakes are light, fluffy, and cooked throughout.
  • Serve with fresh berries, butter, and maple syrup.

Notes

  • You can prepare these up to 1 hour ahead. Keep them warm by wrapping in foil and placing them in the oven at 175°F before serving.
  • It's best to use finely ground cornmeal, but medium or coarse ground can also be used.
  • For enhanced flavor, consider using rendered bacon fat instead of butter.
  • You can substitute milk for buttermilk.
  • To make your buttermilk, mix 1 tablespoon of white distilled vinegar or lemon juice with 1 cup of milk.
  • You can also cook the cakes in butter instead of oil.
