In a small saucepan, heat the water on low heat. Add the unflavored gelatin and stir until fully dissolved. Do not boil. Once dissolved, turn off the heat and let it cool slightly.
Add the condensed milk, coconut milk, cream of coconut, crushed pineapple, and dissolved gelatin water to a blender.
Blend everything until smooth and well combined.
Pour the mixture evenly into serving glasses.
Place the glasses in the refrigerator and chill for at least 1 hour, or until the mousse is set.
Before serving, garnish with grated coconut or maraschino cherries.
