  • Place the American cheese and whole milk into a saucepan. Turn the heat to medium.
  • Stir continuously as the cheese melts. Keep stirring to prevent burning. The mixture should become smooth and creamy.
  • Add the green chilies (with juice), diced onions, minced garlic, and garlic salt. Stir well to combine.
  • Let the mixture simmer gently. Stir occasionally. Cook until the onions become soft and slightly transparent. This usually takes about 5–7 minutes.
  • Once the onions are cooked, remove the saucepan from heat.
  • Stir in the diced tomatoes. Mix well.
  • Garnish with extra diced tomatoes and chopped cilantro. Serve warm with tortilla chips.

Notes

Do not cook on high heat. High heat can cause the cheese to separate.
Stir constantly while melting to keep the texture smooth.
Add tomatoes after removing from heat to keep them fresh and bright.
If queso becomes too thick, add 1–2 tablespoons of milk and stir.
