For Chicken Marinate:
Wash and cut chicken thighs into chunks.
Whisk together egg white, soy, sauce, pepper vinegar, and sugar in a mixing bowl
Add in chicken pieces and let marinate.
For Sweet Tomato Sauce:
Heat oil in a saute pan and add ginger and garlic. Stir fry till aromatic for a few minutes.
Add the remaining ingredients and heat for 6 minutes, or until the sauce becomes sticky and reduced.
For Cook The Chicken :
Add cornstarch to chicken and stir until well-coated. Deep fry for 4 minutes, until golden brown, then remove and drain.
Add chicken to the sticky tomato sauce and put it in a heat-proof dish.
Arrange halved cherry tomatoes around the saucy chicken and then add mozzarella cheese.
Bake for 8 minutes at 500 degrees Fahrenheit, or until the cheese is melted and golden brown.
Garnish with chopped fresh basil and drizzle with olive oil.
