  • Baking tray or baking sheet
  • Plastic wrap or lid

Ingredients

For Olga Bread:

  • 4 cups King Arthur All-Purpose Unbleached Flour, Recommended
  • 1 cup Vitamin D milk
  • 4 tablespoons margarine
  • 4 tablespoons honey
  • ¼ cup warm water
  • 1 tablespoon active rising yeast
  • 1 teaspoon kosher salt
  • 1 tablespoon granulated sugar
  • 1 large egg room temperature
  • 1 tablespoon olive oil for greasing bowl

For Olga’s Snackers Seasoning:

  • 4 ½ tablespoons sesame seeds
  • 2 teaspoons salt
  • 3 teaspoons paprika
  • 1 ½ teaspoons celery seeds
  • 1 ½ teaspoons poppy seeds
  • ¾ teaspoon coarse ground black pepper
  • ¾ teaspoon garlic powder
  • 6 tablespoons Milano’s Romano Cheese, Recommended
  • 3 dashes cayenne pepper

For Assembling Snackers:

Instructions

  • In a small saucepan, heat the milk until it just begins to steam (do not boil). Transfer to a large mixing bowl. Add honey, margarine, and salt. Stir until margarine melts completely. Let the mixture cool until lukewarm.
  • Step 2: Activate the Yeast
  • In a separate bowl, combine warm water, sugar, and yeast. Stir gently. Let it sit for 5–10 minutes until bubbles form. This means the yeast is active.
  • Step 3: Make the Dough
  • Add 1 1/2 cups of flour to the milk mixture and mix well. Then add the yeast mixture and egg. Stir until combined.
  • Gradually add the remaining flour until a soft, sticky dough forms.
  • Step 4: Let the Dough Rise
  • Grease a bowl with olive oil. Place the dough inside and turn it once so all sides are coated. Cover with plastic wrap.
  • Let the dough rise in a warm place for about 1 hour or until it doubles in size.
  • Step 5: Shape the Bread
  • Punch down the dough and transfer it to a floured surface. Divide into 16 equal pieces.
  • Roll each piece into a thin circle (8–10 inches wide). The dough should be very thin, about 1/8 inch thick.
  • Step 6: Cook on Skillet
  • Preheat a dry skillet over medium-high heat. Cook each dough circle for about 15 seconds per side until light brown spots appear. Do not overcook.
  • Step 7: Prepare Seasoning
  • In a bowl, mix all seasoning ingredients thoroughly. Set aside.
  • Step 8: Cut and Bake
  • Preheat oven to 350°F (175°C).
  • Cut each bread circle into triangles. Place them on a baking sheet. Lightly spray with olive oil spray.
  • Sprinkle generously with snackers seasoning.
  • Bake for 3–4 minutes. Flip the pieces and bake another 3–4 minutes. Sprinkle a little more seasoning if desired.
  • Remove when golden and crispy. Let cool before serving.

Notes

Make sure the milk is not too hot, or it can kill the yeast.
Roll the dough thin for extra crispiness.
Do not overcrowd the baking tray.
Keep an eye on them while baking; they crisp quickly.
