Ingredients
  

Optional add-ins:

  • 3 –4 cups cheddar cheese
  • 1 can diced tomatoes drained
  • 1 can corn drained
  • 1 can black beans washed and drained
  • Chili powder or garlic powder

Instructions
 

  • Heat a large skillet over medium heat. Add the bacon strips and cook until crispy. If needed, cook in batches to avoid overcrowding.
  • Once cooked, transfer the bacon to paper towels to drain excess grease.
  • In the same skillet (keep a little bacon grease for flavor), add diced green peppers and onions. Sauté until soft and slightly tender, about 5–7 minutes.
  • Add the flour to the skillet and stir well. Slowly pour in the milk while stirring continuously to avoid lumps.
  • Season with salt and pepper.
  • Bring the mixture to a gentle simmer. Stir continuously until the sauce thickens. This usually takes 5–8 minutes.
  • Return the crispy bacon to the skillet. Stir well and cook for another 2 minutes to combine flavors.
  • Serve immediately while hot and creamy.

Notes

You can replace whole milk with half-and-half or cream for a richer taste.
For extra cheesiness, add cheddar cheese after the sauce thickens.
If you prefer baked bacon, cook it in the oven at 400°F (200°C) for 15–20 minutes.
Always remove seeds and membranes from green peppers to reduce bitterness.
