  • Follow these easy step-by-step instructions to make the perfect Marc Murphy Carbonara:
  • Step 1: Prepare the Pancetta
  • Cut the bacon or pancetta into small diced pieces using a sharp knife. Place it in a bowl and set aside.
  • Step 2: Cook the Pancetta
  • Heat olive oil in a large sauté pan over medium heat until it starts to shimmer. Add the pancetta and cook until golden brown and crispy, about 5 minutes. Reduce the heat to the lowest setting to keep warm.
  • Step 3: Prepare the Egg Mixture
  • In a large bowl, whisk together the eggs, grated Parmigiano-Reggiano cheese, black pepper, and a pinch of salt. Set aside.
  • Step 4: Boil the Pasta
  • Fill a large pot with water and add enough salt so it tastes like seawater. Bring it to a boil. Add the spaghetti and cook according to package instructions until al dente.
  • Step 5: Reserve Pasta Water
  • Before draining, reserve 1 ½ cups of pasta cooking water. This starchy water helps create a smooth sauce.
  • Step 6: Combine Everything
  • Drain the pasta quickly and add it directly to the bowl with the egg mixture. Add the warm pancetta along with all the flavorful pan fat.
  • Step 7: Mix and Create the Sauce
  • Toss everything together for about one minute. The heat from the pasta will gently cook the eggs, forming a creamy sauce. If needed, add a little reserved pasta water to loosen the sauce.
  • Serve immediately with extra cheese and black pepper on top.

Notes

Use room temperature eggs to prevent scrambling.
Do not cook the egg mixture over direct heat. The pasta heat is enough.
Work quickly when mixing to achieve a smooth texture.
Freshly grated cheese melts better than pre-packaged cheese.
