Cut off the tops of the garlic bulbs. Drizzle olive oil over them and wrap in aluminum foil.
Bake for 30 to 45 minutes until soft and golden. Let cool, then squeeze out the roasted garlic.
Bring to a simmer and cook for 15–20 minutes until soft.
Drain the chilis and set aside.
Add the following to a blender or food processor:
Pureed onions
Roasted garlic
Softened chipotle chilis
Fire-roasted tomatoes (drained)
Blend until completely smooth and thick.
Transfer the blended mixture into a pot.
Add:
Tomato paste
Garlic chili paste
Rice vinegar
Mix well.
Now add all dry ingredients into the pot. Stir thoroughly until combined.
Bring the mixture to a gentle boil. Reduce heat and simmer for 15–18 minutes, stirring occasionally.
The paste will thicken and become very fragrant.
Allow the paste to cool completely.
Spoon into ice cube trays (about 2 tablespoons per cube). Freeze until solid.
Once frozen, transfer cubes into an airtight freezer bag for long-term storage.

Cocoa powder enhances the smoky depth without making it sweet.Draining tomatoes prevents the paste from becoming too watery.Roasting garlic is important for rich flavor.If you want milder paste, reduce chipotle chilis.
