Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper to prevent sticking.
In a mixing bowl, combine:
All-purpose flour
Bread flour
Baking powder
Salt
Whisk the ingredients together until well combined. Set the bowl aside.
In another bowl, whisk together:
Whole egg
Egg yolk
Then add:
Dark brown sugar
Granulated sugar
Melted butter
Vanilla extract
Instant coffee powder
Mix everything until the mixture becomes smooth and creamy.
Slowly add the dry ingredients into the wet mixture.
Mix gently using a spatula until a soft cookie dough forms. Avoid overmixing, as this can make the cookies tough.
Add 1 cup of chocolate chips to the dough.
Fold them evenly into the mixture so that every cookie has plenty of chocolate.
Scoop small portions of dough and roll them into balls.
Place them on the baking tray and gently press each ball to create a cookie shape.
Leave enough space between cookies so they can spread while baking.
Place the tray in the oven and bake for 10 minutes or until the tops turn golden brown.
The edges should be slightly firm while the centers remain soft.
Remove the cookies from the oven and allow them to cool on the tray for about 10 minutes.
Then transfer them to a cooling rack.
Once cooled, the cookies are ready to enjoy.
