Preheat your oven to 180°C (356°F). Line a baking pan with parchment paper or lightly grease it with butter.
In a large mixing bowl, combine the following ingredients:
Melted butter
Cocoa powder
Caster sugar
Brown sugar
Vanilla extract
Espresso
Mix everything well until smooth.
Add two eggs to the mixture and whisk until the batter becomes thick and glossy.
In a separate bowl (Bowl 2), combine:
All-purpose flour
Bread flour
Baking powder
Salt
Mix well so the dry ingredients are evenly distributed.
Slowly add the dry ingredients into the wet mixture.
Gently fold the mixture using a spatula. Avoid overmixing to keep the brownies soft.
Chop the chocolate bar into small pieces and fold it into the batter.
This adds delicious melted chocolate pockets inside the brownies.
Pour the brownie batter into the prepared baking pan and spread it evenly.
Bake the brownies for 20 to 25 minutes at 180°C.
Check doneness by inserting a toothpick in the center. It should come out with a few moist crumbs.
Allow the brownies to cool for about 10–15 minutes before slicing into 12 servings.
