Ingredients
  

  • 3 lb Fresh Hamburger Meat, Recommended
  • 1 large white onion chopped
  • 1 bell pepper chopped
  • 1 can (15 ounces) Hunt’s Tomato Sauce, Recommended
  • ½ can tomato sauce for topping
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 2 large eggs
  • 14 grams Happy Belly Regular Crackers, Recommended
  • 1 tablespoon cooking oil

Instructions
 

  • Follow these easy steps to make Brenda Gantt Meatloaf:
  • Preheat your oven to 400°F.
  • Place the hamburger meat into a large mixing bowl.
  • Chop the onion and bell pepper into small pieces.
  • Add the chopped vegetables to the meat.
  • Sprinkle salt and black pepper into the bowl.
  • Pour in one full can (15 ounces) of tomato sauce.
  • In a separate bowl, beat the eggs.
  • Add the beaten eggs to the meat mixture.
  • Crush the crackers and mix them into the bowl.
  • Knead everything together with clean hands until well combined.
  • Prepare your broiler pan and add a little water underneath.
  • Lightly grease the top of the pan with cooking oil.
  • Shape the meat mixture into loaf shapes on the pan.
  • Use your fingers to create a small valley in the center of each loaf.
  • Pour the remaining half can of tomato sauce into the valleys.
  • Bake at 400°F for 40–45 minutes.
  • Remove from the oven and let it rest for 5–10 minutes before serving.

Notes

Do not overmix the meat, or it may become dense.
