  • Follow these simple steps to prepare your fruit cocktail cake:
  • Preheat your oven to 180°C (350°F).
  • Lightly grease a 9-inch square baking pan with butter.
  • In a large mixing bowl, beat the eggs using a whisk until bubbly and frothy.
  • Add the caster sugar and salt. Mix well until fully dissolved.
  • In another bowl, combine flour and baking soda. Stir well.
  • Gradually add the dry ingredients into the egg mixture and mix gently.
  • Add the fruit cocktail along with all the syrup. Do not drain it. Fold everything together until combined.

  • Pour the batter into the prepared baking pan and spread evenly.
  • Sprinkle chopped walnuts and brown sugar evenly over the top (optional).
  • Bake for 40–45 minutes.

  • Remove from oven and let it cool on a rack.
  • Sprinkle some freshly sifted brown sugar on top if desired.
