In a mixing bowl, toss the chicken, 2 tbsp peanut oil, and 2 tsp cornstarch.
Over medium heat, heat the additional 2 tablespoons of peanut oil in a skillet.
Stir-fried the chicken for 2 to 3 minutes.
After sprinkling with lemon rind, add chicken stock, fresh snow peas, and salt to taste.
For 1 to 2 minutes, stir fry.
In a small bowl, combine lemon juice, cornstarch, and water paste.
Stir until the sauce thickens in the skillet.
