  • Preheat your oven to 425°F (220°C).
  • Step 2: Prepare the Corn
  • Place the husked corn in a medium cast iron skillet.
  • Drizzle with olive oil and sprinkle with kosher salt.
  • Step 3: Roast the Corn
  • Roast in the oven for 18–22 minutes, turning once halfway through.
  • The corn should be tender inside and slightly browned outside.
  • Step 4: Make the Creamy Sauce
  • In a small mixing bowl, combine:

  • Sour cream
  • Lime juice
  • ¾ teaspoon chili powder
  • A pinch of salt
  • Mix well until smooth and creamy.

  • Step 6: Add Toppings
