Instructions
 

  • Start by adding cornstarch and water to a high-powered blender.
  • Blend the mixture until it becomes completely smooth. This step helps prevent lumps during cooking.
  • Pour the blended mixture into a 3.5-quart saucepan.
  • Place the saucepan on the stove over medium-high heat.
  • Start heating the mixture while stirring constantly with a whisk or spoon.
  • Continuous stirring prevents the cornstarch from sticking to the bottom of the pan.
  • Once the mixture begins warming, add the following ingredients:
  • Chinkiang vinegar
  • Butter or margarine
  • Onion powder
  • Sugar
  • Salt
  • Celery seed
  • Celery salt
  • Black pepper
  • Stir thoroughly after adding each ingredient to ensure everything blends smoothly.
  • Continue cooking the mixture while stirring constantly.
  • After a few minutes, the dressing will begin to thicken and become smooth.
  • This process usually takes about 15 to 20 minutes.
  • Once the dressing reaches a smooth, thick consistency, remove the saucepan from the heat.
  • Allow the dressing to cool completely.
  • After the dressing has cooled, pour it into an airtight container or jar.
  • Seal the container tightly and store it in the refrigerator.
