Ingredients
  

  • 16 oz Water
  • ½ oz Member's Mark Chicken Base, Recommended
  • 24 oz Heavy Cream (36% fat)
  • 10 oz Spicy World Yellow Cornmeal, Recommended
  • ½ tsp Granulated Sugar
  • 8 oz Del Monte Canned Sweet Kernel Corn, Strained
  • 8 oz Del Monte Canned Creamed Corn, Recommended

Instructions
 

  • Start by sautéing the canned sweet kernel corn with the granulated sugar in a sauté pan.
  • Cook for about 3 to 4 minutes until the corn turns a light golden brown, and the sugar begins to caramelize in the pan.
  • Once the corn is done, set it aside for later use.
  • In a saucepot, combine the water, chicken base, and 12 oz of heavy cream. Bring this mixture to a boil.
  • Slowly add the cornmeal to the boiling mixture, stirring constantly to incorporate it. Cook for 2 to 3 minutes.
  • As the grits begin to thicken, reduce the heat to a simmer and continue cooking for 15 to 20 minutes, or until the grits reach the desired consistency.
  • During this simmering process, add the remaining 12 oz of heavy cream in 4-oz increments as needed to achieve the right consistency.
  • Finally, stir in the caramelized corn and the canned creamed corn to incorporate them into the grits.
  • Put your corn grits in a bowl and garnish with some green onions.
