  • In a pot, combine the sugar, soy sauce, apple cider vinegar, pineapple juice, minced ginger, and minced garlic.
  • Heat the mixture over low heat until the sugar is completely dissolved.
  • Let the marinade cool for about 1 hour.
  • Season the boneless short ribs with salt and pepper.
  • Preheat your oven to 350°F (175°C).
  • Place the seasoned steaks on a rack over a baking sheet.
  • Roast them in the preheated oven for 45 minutes.
  • Allow the roasted steaks to cool down.
  • Place the cooled steaks in the marinade you prepared earlier.
  • Put the dish with the steaks and marinade in the fridge and let them marinate overnight or for at least 24 hours.
  • Preheat your oven to 275°F (135°C).
  • Transfer the marinated steaks and the marinade into an oven-proof dish.
  • Seal the dish with foil to keep the moisture in.
  • Bake in the preheated oven for approximately 1 1/2 hours, or until the steaks become tender and fall apart easily.

Notes

If there's no marinade left or if it seems too dry during baking, you can add a bit of sherry or water to the dish before sealing it with foil. This will ensure there is enough moisture to keep the steaks tender.
