Open the bag of Goya green split peas, sort them, and wash them.
Heat the olive oil in an 8-quart pot on medium heat.
Add chopped onion, minced garlic, diced carrot, and diced smoked ham to the pot.
Stir and cook for five minutes.
Add 6 cups of water and bring to a boil on medium-high heat.
Add Goya Peas, Chicken Bouillon, and Sazon.
Stir with a wooden spoon to mix and reduce the heat to low.
Simmer for 1 to 1 1/2 hours or until peas are tender.
Add salt and ground black pepper according to your taste.
If it's necessary, add some additional hot water.
