Ingredients
  

For Lightning Dressing:

For Green Lightning Bowl:

  • 6 tbsp Low-Sodium Tamari Soy Sauce
  • ¼ cup 100% Pure Maple Syrup
  • 1 (14-Ounce) Block Of Firm Tofu, Cut Into Bite-Size Cubes
  • 8 Ounces Thai Kitchen Brown Rice Noodles, recommended
  • 3 tbsp Sesame Seeds
  • 6 Green Onions, Diced
  • 4 cups Thinly Sliced Kale
  • 1 Avocado, Cubed
  • ½ cup Cilantro Leaves
  • 1 cup Lightning Dressing

Instructions
 

For Lightning Dressing:

  • In a small lidded container, combine 5 tbsp Low-Sodium Tamari, Pure Maple Syrup, Rice Vinegar, Minced garlic, Minced Fresh Ginger, Jalapenos Pepper, Grated Lime Zest, Lime Juice, and Red Pepper Flakes.
  • Put the lid on and shake it all together.
  • Your lightning dressing is ready to use.

For Green Lightning Bowl:

  • Set the oven's temperature to 400 degrees Fahrenheit.
  • Using parchment paper, line a baking sheet.
  • Toss the tamari, maple syrup, and tofu cubes together in a bowl until evenly coated.
  • Pour onto the prepared baking sheet and bake for 45 minutes, or until browned.
  • Prepare the rice noodles according to the package's instructions(About 10 Minutes) and set them aside.
  • Toast the sesame seeds in a skillet over medium heat.
  • Keep an eye on them as they toast for about 5 minutes, or until they are fragrant and lightly browned.
  • Take the toasted sesame seeds away from the heat.
  • Toss the cooked rice noodles, tofu cubes, green onions, kale, avocado, cilantro, and dressing in a mixing bowl.
  • Sprinkle it with the toasted sesame seeds and serve right away, or put it in the fridge until you're ready to serve.
