Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9"x 12" baking dish or individual baking dishes with some butter or cooking spray.
In a large mixing bowl, combine the following eight ingredients: frozen hash browns, cream of chicken soup, sour cream, melted salted butter, shredded cheddar cheese, diced onion, sea salt, and black pepper. Mix everything together until it's well combined.
Spread this mixture evenly in the prepared baking dish(es). Make sure it's nice and level.
Now, in another bowl, mix together the corn flakes crumbs and melted unsalted butter until the corn flakes crumbs are coated.
Sprinkle this corn flake crumbs mixture evenly over the top of the potato mixture in the baking dish(es). This will give your potatoes a nice, crispy topping.
Place the baking dish(es) in the preheated oven. Bake for about 60 to 70 minutes, or until the top is golden brown and the dish is bubbling around the edges.
Once it's done baking, take it out of the oven and let it sit for about 5 minutes. This helps it set a bit.
