  • In a sizable saucepan, melt the unsalted butter at low heat.
  • Stir in the pine nuts until they are golden brown.
  • Place in a small bowl.
  • In the same pan, melt the remaining 2 tbsp of unsalted butter over medium heat.
  • Add chopped shallots and cook until golden.
  • When the couscous starts to turn a light golden color, add the bay leaf and cinnamon stick. Stir frequently.
  • Add salt and chicken broth and then bring to a boil.
  • Cover the saucepan and reduce the heat to low.
  • Simmer until the couscous is soft and the liquid has been absorbed.
  • Remove from heat and stir in pine nuts, parsley, and the zest of 1/2 lemon.
  • Add raisins for a sweet, tangy flavor.
  • Season with black pepper to taste.

Notes

Use salt with caution. Most store-bought chicken broth already contains enough salt that no additional salt is required. Be sure to add enough salt to homemade chicken broth in order to bring out the flavors.
