Preheat the Skillet:

  • Place the skillet on the burner and set it to medium-high heat. Pour the oil into the skillet, letting it heat up.

Prepare the Chicken:

  • Season the chicken breasts with salt and pepper. Once seasoned, add them to the heated skillet. Cook the chicken on both sides until fully cooked, ensuring there's no pink in the centre. Use tongs to flip the breasts as needed.

Mince the Onion:

  • While the chicken cooks, take the onion, and using a cutting board and chef’s knife, peel and mince it.

Cook the Onion:

  • Once the chicken is fully cooked, transfer it to a clean plate. Add the minced onion to the skillet. Let the onion cook for 5-7 minutes until it turns into a paste-like consistency.

Make the Island Fire Sauce:

  • To the onion paste in the skillet, add Crushed Pineapple, Orange Juice, Brown Sugar, Thyme, Ground Nutmeg, and Ground Ginger. Turn the heat to high, allowing the mixture to thicken and the flavours to enhance.

Combine Chicken with Sauce:

  • Cut the cooked chicken into bite-sized pieces and add it back to the skillet with the Island Fire sauce. Add some sliced onions and stir well to coat the chicken pieces with the sauce.

Notes

For a crispy alternative, you can fry the chicken instead of cooking it in the skillet. Heat oil to 375°F in the skillet, fry the chicken breasts until golden on both sides and then prepare the Island Fire sauce in a separate skillet to coat the fried chicken.
