1lbRed Chili Peppers (cayenne, Tabasco, or red jalapeno)
1cupWhite Wine Vinegar (adjust to your liking)

Instructions
Wash the chili peppers and remove the stems. You can leave the seeds if you want the sauce to be spicier.
Chop the chili peppers roughly.
In a pot, combine the chopped chili peppers, salt, and vinegar. Make sure the vinegar covers the peppers.
Put the pot on the stove over medium heat. Let the mixture come to a quick boil, then reduce the heat to low. Simmer for about 15 minutes to blend the flavors.
Take the pot off the heat and let the mixture cool to room temperature.
Transfer the cooled mixture to a food processor or blender. Blend until smooth.
Place a strainer over a bowl or container and pour the sauce through it. This will remove any remaining solids or seeds, giving you a smoother sauce. You can discard the strained solids or keep them for other uses.
Pour the strained sauce into clean, sterilized bottles. Seal the bottles tightly.
Store the sauce in the refrigerator to extend its shelf life. The flavor will become more intense over time.
