Ingredients
  

  • 1 lb Red Chili Peppers (cayenne, Tabasco, or red jalapeno)
  • 1 cup White Wine Vinegar (adjust to your liking)
  • 1 tsp Salt (adjust to taste)

Instructions
 

  • Wash the chili peppers and remove the stems. You can leave the seeds if you want the sauce to be spicier.
  • Chop the chili peppers roughly.
  • In a pot, combine the chopped chili peppers, salt, and vinegar. Make sure the vinegar covers the peppers.
  • Put the pot on the stove over medium heat. Let the mixture come to a quick boil, then reduce the heat to low. Simmer for about 15 minutes to blend the flavors.
  • Take the pot off the heat and let the mixture cool to room temperature.
  • Transfer the cooled mixture to a food processor or blender. Blend until smooth.
  • Place a strainer over a bowl or container and pour the sauce through it. This will remove any remaining solids or seeds, giving you a smoother sauce. You can discard the strained solids or keep them for other uses.
  • Pour the strained sauce into clean, sterilized bottles. Seal the bottles tightly.
  • Store the sauce in the refrigerator to extend its shelf life. The flavor will become more intense over time.
